Chef’s Blend Extra Virgin Olive Oil

This is perfect oil for all uses in the kitchen. It is crisp and fruity overall, has enough flavors for use as an ingredient, but is not so overpowering that it can’t also be used directly on a dish or as a condiment. This oil blend varies with the season but always contains a substantial portion of Arbequina with other varietals like Mission and Manzanillo blended in early in the year and Italian varietals blended in later in the year to maintain the same taste profile all year long.

Tasting
Olive oil is a fruit juice obtained from olives and like wine there are different varietals. However, it does not improve with age and should be used daily with food. At our shop we have different varietals that will appeal to people by taste or use. Tasting can assist in choosing the right olive oil for our personal taste and recipes. Most of our olive oils and vinegars are from California and, specifically Central Coast and grown organically.
When tasting olive oil it is good to know that there are different compounds that influence the taste. These are known as phenols, glucosides, chlorophyll, and tocopherols. These compounds are responsible for the oil’s bitterness, its pungency and antioxidant capacity; this is what makes the oil so good for you, the high content of monounsaturated fatty acid and polyphenols are what makes olive oil a health benefit.
High quality olive oil is produced by using only olives, and extracted without excess heat, solvents or chemical treatments. That is why we are buying our olive oil direct from the farmers and miller which produces the highest quality olive oil we can buy from California. Our flavored olive oil is not infused but the actual fruit is pressed into the oil during the production process, making it very high quality oil.
The bottles should always be dark green so less light can damage the oil. Keep your olive oil away for light, air and heat while storing it. Make sure the cork is in tightly. This will keep the oil fresher longer.
