Balsamic Roasted Brussel Sprouts

Serves 6:

  1. Preheat oven to 400 F
  2. Place brussel sprouts on sheet pan
  3. Cut pancetta into ½ in pieces add to pan
  4. Add olive oil 1 ½ tsp of salt and pepper
  5. Toss with your hands – spread mixture evenly
  6. Roast for 20-30 min until browned
  7. Toss again during roasting
  8. Drizzle with balsamic and toss again when finished

Ingredients

- 1 ½ pounds brussel sprouts
- 4 oz. of pancetta or bacon, sliced ¼ thick
- ¼ cup of herbed olive
- Oil, kosher salt and fresh ground pepper
- 1 tbs of Blackberry balsamic or 25 year aged balsamic
